Schiacciata con L’uva (Italian Grape Harvest Bread)

Hi everyone!

Today’s recipe is from the beautiful region of Tuscany in Italy. “Schiacciata con L’uva” in Italian literally means “crushed with grapes”. This bread is baked and sold in bakeries across Tuscany during harvest season. The most authentic version of this bread is made with local Tuscan sweet and juicy dark grapes called uva fragolameaning “strawberry grapes”. If you can find these grapes where you live, then definitely use those.

You can use almost as much grapes as you want, the more actually the better! You can also make the dough thinner to end up with a crispy bread. Sprinkling sugar on top of grapes makes the bread sweeter and a bit sticky and oh so yummy! 😀

This bread goes well with cheese , wine and of course some Italian music! You might like this one:

Ingredients:

500g fine italian 00 flour
1 medium potato
3 teaspoons of instant active dry yeast
10 grams of salt
3 tablespoons of sugar
Black grapes (About 30, but the more the better!)
Olive oil, for greasing

Method:

Part 1- Making the Dough:

1. Cook the potato in boiling water, until soft.
2. Mash with a potato masher, until no lumps are left.
3. Mix the yeast and 1 tablespoons of sugar with 250 ml of warm water, let sit for 10 minutes.
4. Place the flour and salt in a mixing bowl.
5. Add the potato to the yeast mixture.
6. Add the yeast mixture to the flour mixture (dry ingredients).
7. Mix with a wooden spoon until you get a rough dough.
8. Transfer the rough dough to a floured surface.
9. Knead for 10 minuets until you get a smooth dough.

10-11. Put the dough back into an oiled bowl and let rise in a warm place until doubled (approximately an hour).
12. Then, transfer back to the floured surface and punch it back.

Part 2- Assembling the layers:

NOTE: Before you start, line a rectangular backing tray with baking paper. The one I used is 38 cm x 25 cm.

1-2. Divide the dough into two portions: 1/3 and 2/3 of whole dough. Roll out the bigger portion to the size of your baking tray and place it in there.
3. Place 1/3 of your grapes on this bottom layer.
4. Roll out the smaller dough portion to the size of your baking tray.
5. Chop the rosemary leaves.
6. Put the rolled out dough on top of the bottom layer (with grapes on it), then add chopped rosemary leaves. Sprinkle with 2 tablespoons of caster sugar on top.
7. Let rise for 30 minutes. Meanwhile preheat the oven to 250C.
8. Bake in oven for approximately 10 minutes (until golden brown on top and bread is baked through). Optional: Dust with icing sugar.

Thats it! If you prefer it a bit sweeter, you can drizzle it with a bit of honey as well. Best eaten warm and as soon as possible!  Enjoy!!~~~~ 🙂

    1. Thanks Darya!! 🙂 I found an Italian recipe which had the potato in it & it seemed interesting to me too! The taste of it doesn’t come in the bread at all. I’m gonna find out what the potato does exactly in this recipe! Will let you know 🙂 x
