Chicken Cacciatore (Italian Hunter-Style Chicken Stew)

I’m constantly on the lookout for interesting foods from other countries. I heard this dish on TV last week, but since I had not heard of it before, I kept googling it with the wrong spelling and couldn’t find it! Anyways, after about 10 times of doing this, I finally found the recipe!

For those of you who haven’t heard of this dish before, “Cacciatore” is pronounced “cah-chah-to-rreh”, and in Italian means “hunter”. Basically, it is a chicken stew prepared hunter-style and it’s soooo delicious! When I was looking at the recipes, it seems that everyone uses slightly different ingredients. So this is my version of it! I hope you guys like it as much as I did! Let me know!! 😀

Ingredients:

  • 2 tablespoons light olive oil
  • 1/2 medium brown onion, diced
  • 2 cloves of garlic, crushed
  • 1 tablespoon plain flour
  • 1 skinless chicken breast fillet, diced (I used only breast to make the dish less fatty, you can add thighs as well)
  • 1/2 red capsicum, diced
  • 10 (or 1 teaspoon) capers
  • 1 tablespoon tomato paste
  • 200 g crushed tomatoes
  • 1 teaspoon of dried basil
  • Pinch of ground chilli
  • Pinch of black pepper
  • 1 cup chicken stock
  • Handful of coriander or parsley leaves to Garnish
  • Fresh Lemon juice or ver juice, to taste

Method:

1. Heat oil in a pan.
2. Coat the chicken pieces in flour.
3. Add the onion and fry until translucent.

4. Add the garlic and tomato paste. Fry for about 30 seconds, while stirring. Be careful not to burn it. The tomato paste can stick to the bottom of the pan if you’re not stirring.
5. Add the chicken pieces along with diced tomatoes, and all the spices. Mix to combine.

6. Pour over the stock and mix again. Put the lid on the pan and let simmer for 15 minutes.
7. Add the capsicum pieces and capers and stir. Let simmer until the capsicum pieces are soft.

8. That’s it! Garnish the dish with parsley or coriander. You can add a bit of lemon juice or ver juice too, if you like.
